Italian Beef Stew


For this Italian Beef Stew, I used Foodiebride's recipe. Let me tell you, the flavor was amazing. This recipe is definitely a keeper in our family, it was delicious =) and best of all, it uses cheap meat, ha! Not that I'm cheap, but I'd like to have options on both sides... =) so, what do you think? Do you usually make stews? What do you use on them? Do you prefer chicken? meat?
So, I used:
  • 2 tbsp olive oil, divided
  • 2 lb beef brisket
  • salt and pepper to taste
  • 1 onion, sliced 
  • 1lb baby carrots 
  • 2 potatoes, skin-on, quartered
  • 1 quart no fat beef broth
  • 6 oz tomato paste
  • 1 cup red wine
  • 4 garlic cloves, minced
  • 1 sprig rosemary
  • 2 sprigs each thyme and oregano
  • 2 tbsp cornstarch
  • 1 cup spinach leaves, chopped
  • ground/dry basil, 2 tbsp




Cut beef in chunks, around 1-1.5in sized squares. Season beef with salt and pepper.


Heat oil and seal each beef square.


Remove them from oil and place them on slow cooker bowl.


Top with onion, potatoes and carrots.


Add beef broth, tomato paste and red wine...


Add seasonings, garlic cloves and herbs sprigs.


Cook on low for 8 hours. At the end of the cooking time, remove 1/4 cup cooking liquid and add cornstarch. 


Whisk until smooth.




Stir into the crockpot, cover, and let cook for additional 20 minutes.



Stir in the spinach and basil.


Serve.

Our house smells amazing... And you can freeze individual portions as go-to!
