Buffalo Chicken Pizza

 

You know I love Buffalo-Chicken-Blue cheese blend. I just do. You can check my Buffalo Chicken Sandwich, my Cheesy Chicken Buffalo Soup or my Buffalo Dip. Tonight, I decided to make some "extra-crispy and extra-thin" buffalo spiced chicken and so much melting cheese pizza. I'm not kidding. You should definitely try this pizza, it's so good. Let me know what you think about it.
I used:
  • 1/2 cooked and shredded chicken breast, or around 2 1/2 cups
  • 2 1/2 cups shredded mozarella cheese
  • 3 extra-thin pita bread pieces
  • 9 tbsp Frank's Red Hot Original (or any wings sauce you prefer)
  • 6 tbsp Marzetti Chunky Blue Cheese dressing
  • 3 celery sticks (not in the picture), finely chopped



First, preheat your oven to 300-340°F (150-170°C). 

If you don't have any cooked chicken: You can throw in a deep pot 1 garlic clove, 2 chicken breasts (or 1 chicken breast and 2 thights and legs, whatever) and cover with water. Let them simmer for 20-25 minutes or until well cooked. Save chicken broth to make Chicken Buffalo Soup (to be added later) and save remaining chicken too. You can even freeze it.

Now, top each pita bread with 2 tbsp of buffalo sauce and spread evenly.


Top them with around 3/4 cup of mozzarella cheese; spread evenly.


Top them with shredded chicken.



Now, drizzle each one with 2 tbsp of blue cheese dressing.



Top each with one finely chopped celery stick.



Bake them for 15-20 minutes, depending on the crispiness level you prefer.



Don't you think this is looking so yum-yum-yum?


Now drizzle one extra tbsp of buffalo sauce on each pizza.



And you are ready to eat!!
