Banana Bread

 

For many weeks, I've been craving for banana bread and last Friday, my friend Ana came home and stayed with me (coz the hubs was on a business trip). We made Annie's recipe for Peanut Butter Cup Banana Bread, although I changed it just a little bit, as I always do. Her recipe makes 2 loaves, I made just 1.


So, we used:

  • 3 mashed bananas (small size)
  • 1/2 cup orange juice
  • zest from one orange
  • 2 eggs
  • 1/4 cup oats
  • 3/4 cup melted unsalted butter
  • 2 1/4 cup flour
  • 7/8 cup brown sugar
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 3/4 cup chocolate bites (I mixed M&M's and Reese's cups)


Pre-heat oven to 350°F and spray pan with non-stick spray. Mix mashed bananas and orange juice and set aside.


In another bowl place flour, oats, baking powder, salt, baking soda, cinnamon and nutmeg.


Whisk them together and set aside. 


In another bowl beat together melted butter and brown sugar...


Start by adding eggs one by one, then orange zest and then vanilla. Beat until it's light colored.


Alternate by adding flour mix and then banana mix to the bowl, beginning and ending with flour. Stir gently, folding in ingredients.


After last flour addition add chocolates.



Carefully fold them in.


Place on baking bread pan.


Bake in oven for 50 minutes.
